Private Wine Dinners

We had the pleasure of pairing wine for an in-home wine dinner at the home of Tricia Young, co-founder, sales and marketing manager, and an experienced realtor of Three Sixty Real Estate in Auburn/Opelika & Lake Martin. The dinner was organized to honor their recent top producers. There were 18 attendees, including the hosts.

Tricia coordinated the chef for this event, Chef Miguel Figueroa, a personal chef in the Auburn/Opelika area. Miguel has been a chef in the local restaurant scene for many years and has expanded his services to in-home wine dinners, meal prep services, in-home cooking classes, and catering. His wife, Mandy, is also an incredible pastry chef and prepared a divine dessert for this evening’s event. She is the owner/baker of A Sweet Affair Confectioneries. Tricia has had Miguel do in-home cooking lessons previously as part of a birthday celebration, and she enjoyed that experience so much that there was no question who the chef would be for this event.

Chef Miguel provided the prepared menu to our “Wino In Charge,” John Mark Davis, which allowed John Mark to pair wines with each course. The dinner was comprised of four courses and paired with four different wines. After reviewing the menu and a discussion of budget and wine preferences with Tricia and Nonet, John Mark put together what was a perfectly paired dinner.

The Menu:

1st course: Watermelon Gazpacho – Poached shrimp, watermelon, tomatoes, cucumbers, basil. Paired with a 2020 Pannonica Rosé from Austria.

2nd course: Panzanella Salad- Heirloom cherry tomatoes, cucumbers, pickled red onions, basil, chives, focaccia bread croutons, burrata cheese, red wine vinegar, extra virgin olive oil. Paired with a Louis Latour Montagny 1er Cru La Grande Roche from Burgundy.

3rd course: Surf and Turf- 6oz beef tenderloin, cauliflower crema, salsa verde, Sea Scallops, fire roasted eggplant puree, chili-lime juice, dill. Paired with 2019 Post & Beam Cabernet Sauvignon by Far Niente of Napa Valley.

4th course: Valrhona chocolate “Manjari” mousse, chocolate cookie crumbles, raspberry sauce. Paired with a 2018 Raventos Blanc Sparkling Rosé “De Nit” from Spain.

John Mark presented the wines before the beginning of each course, giving tasting notes, geographical background information, and other interesting facts about each wine producer. This allowed for all attendees to have an expectation with each course, and also provided them with the knowledge of elements to be mindful of while enjoying each course and pairing. The food and wine pairings were spectacular. I saw lots of “happy plates” coming back to the kitchen and received several requests for refills of wine. We were extremely pleased with how much everyone enjoyed themselves.
